Stuffed Squash Flowers 🔥

These guys are a summertime delicacy to those who grow them and know how to cook em! I’ve gotten so many questions about these over the last month so here’s a fun favorite way to dish em up. Get creative!

For the fillings…

Savory

1 cup ricotta, strained

1/2 cup pecorino cheese, grated

1 tablespoon parsley, chopped

1/2 tablespoon lemon zest

Black pepper

Pinch of salt

-Garnish with more pecorino & black pepper

Sweet

1/2 cup ricotta, strained

1/2 cup goat cheese, softened

1 lemon, zested

-Garnish with honey & crushed pistachios

For the batter…

1 cup flour

2 tablespoons corn starch

1 teaspoon baking soda

1 1/2 cup seltzer
